Create this delicious casserole using Bleu du Maine lamb


  1. 3 pounds of lean diced lamb
  2. One bottle of red wine
  3. 500 grams of red current jelly
  4. 2 table spoons of Worcester sauce
  5. 2 tea spoons of mustard powder
  6. Pinch of cayenne pepper
  7. Salt and pepper to taste
  8. Cornflower or arrow root to thicken
  9. Few sprigs of fresh rosemary
  10. Juice of 1 lemon


  1. Heat a little oil in thick based casserole dish and fry off lamb a little at a time until brown on all sides.
  2. Remove from pan and set aside
  3. Use the same dish for preparing the sauce, pour in  the red wine, red current jelly, mustard powder ,lemon juice and cayenne pepper.
  4. Bring to boil and simmer for 20 mins
  5. Add flour to thicken if necessary, add seasoning to taste.
  6. Return meat to dish, add rosemary sprigs, cover with lid and cook in oven for 2 hours on gas mark 2, or Aga bottom oven.
